Grazing platters will continue to be a popular choice for catering, giving guests myriad options and the freedom to build their own meal.
Dalton says when creating the perfect grazing platter, forget the whole fruit and focus on handmade quality foods.
Start with a selection of hard and soft cheeses, add in a variety of cold meats, then finish it off with olives, tomatoes, dips, crackers and bread.
Fill up the platter with whatever foods your guests will enjoy, and remember to have plenty of plates, napkins and cutlery on hand.
Dalton predicts a return of the roast turkey for the festive season, “particularly if people source a quality, free-range bird”.
Roast turkey makes for the ultimate centrepiece for Christmas feasts and can be served with roast vegetables or fresh salads.
Ceviche, a seafood dish made from fresh, raw fish cured in citrus juices, is gaining popularity in Australia.
Dalton says ceviche made with sustainable, local fish is the perfect dish for summer events.
“I’m using different kinds of white fish in my ceviche, and pairing it with crisp hominy corn, lime, coconut and coriander,” he says.
